It' the start of busy season!

It' the start of our really busy season.  I have been cooking up a storm and there is no end in sight. My allergies are going crazy and now I have to wear goggles all the time when I cook so that I don't aggravate my eyes any worse then they are already aggravated.  Today I have 40# of mushrooms and 100# of tomatoes with my name on them.  Salsa seems to going well this season, Devil's Trinity which is a hot salsa with ghost peppers, Trinidad scorpion peppers and Carolina reaper pepper, along with the normal mix seems to be a fan favorite or maybe just a novelty.  I can't understand why someone would want to eat such hot food but I guess that's why I make it. Another fan fav is the Mango Tango, which is a medium fruit salsa with mangos, pineapple and peaches. I think it's great on everything from fish and chicken to lime chips and wheat crackers. I'm trying to figure out how to blend another fruit salsa for this summer but I haven't settled on the fruit base just yet. Our shrub or drinking vinegar concentrate is another summer delight.  You can drink them in water or club soda, now you can find cocktail and vinaigrette recipes right on the label. These acidic delights have been around since the 1500s when pirates would skirt taxes on their rum by pushing the poorly made barrels into the sea. Upon retrieval the rum was tainted with the sea water but the Pirates didn't throw away the rum because they were pirates of course, they would add fruit sugar and vinegar to the mix which masked the salt water taste. This delight can still be made using our non alcoholic shrub syrups. More shrub history next time.  Guess I have to get to work now.

Just see this amazing post with lots of words on cooking! I have been concocting a tempest and there is not a single end to be seen. My hypersensitivities are going insane and now I need to wear goggles all the time when I cook with the goal that I don't disturb my eyes any more terrible then they are as of now bothered. Thanks!!!
