It' the start of busy season!

It' the start of our really busy season.  I have been cooking up a storm and there is no end in sight. My allergies are going crazy and now I have to wear goggles all the time when I cook so that I don't aggravate my eyes any worse then they are already aggravated.  Today I have 40# of mushrooms and 100# of tomatoes with my name on them.  Salsa seems to going well this season, Devil's Trinity which is a hot salsa with ghost peppers, Trinidad scorpion peppers and Carolina reaper pepper, along with the normal mix seems to be a fan favorite or maybe just a novelty.

Rendezvous and Retail

We have just returned from th Zumbro Bend Rendezvos in Mantorville, MN.  We didn't even unload the truck just went and set up tents at the Big Island Rendezvous in Albert Lea.  We have added so new period correct products called Switchels and Shrubs.  So I have been busy working on creations.
 
You can now find some of our jams at Trail's Travel Center in Albert Lea and Welsh Heritage Farms Orchard in Lake Crystal, MN.  It is very exciting to see our products on the shelf in a store.

My Husband is at it again

Well, my Husband is at it again. I came home from the first of the season Farmers Market in Austin, MN , to find that he cooked 18 pieces of chicken....(drums and thighs), in the little smoker for "research"... with 3 kinds of sauces and rub combinations. He said "I have had enough of winter,....we have to catch up... I guess I will be eating his leftovers for awhile...!!!
 
We are so busy, and it all comes so fast! Minnesota In May BBQ contest is at the Rice County Fairgrounds in Faribault this weekend, and although we are not competing, we need to go up and say hello to all our friends in that great sport.

I am trying to get settled into the kitchen and am starting to make some special orders.  Today I made lots of ground cherry jam and some apricot jam too. The location is so big and I am so used to just being able to turn around and wash dishes or work on something the kitchen requires more walking.
 
School is getting to be a chore rather than fun right now and there is only 5 weeks left and still so much to do.

Moving On and In

Moving In

It has been a long journey but on November 1, 2012 we will be moving to a commercial kitchen and expanding our business.  It is quit exciting, scary and crazy.  My hope is that we get to work and met with more great people on this new path.
